Tropical Pineapple Salsa

Ingredients:

  • 2 cups diced fresh pineapple
  • 1 roma tomato, diced

  • Juice of 1 lemon
  • Pinch of flaky sea salt

Instructions:

  1. In a mixing bowl, combine the diced pineapple, roma tomato, red onion, red bell pepper, cilantro, lemon juice, and a pinch of flaky sea salt. Stir gently to combine.
  2. Taste and adjust seasoning, adding more salt or lemon juice if desired.
  3. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld together.

Yields: Approximately 2 cups of Tropical Pineapple Salsa

Note: We left cilantro out of this batch but added it on the next batch. The salsa tastes great with and without cilantro. Other optional add-ons can be jalapeƱos or finely diced chile serrano for some heat.
